Instructions
Strawberry Compote
Step 1
Combine sugar, lemon juice, & fruit in a large saucepan on medium low heat to cook for about 10 minutes or until thicken. Remove from heat and transfer to a bowl to let completely cook at room temp. At this point you can either blend for a smooth piping or leave as it (with chunks) to spoon over dough.
Cream Cheese Mixture
Step 2
Combine vanilla flavor & cheesecake, whip until smooth then add to a piping bag to pipe over dough.
Egg Wash
Step 3
Whisk egg and water until completely smooth
Assembly
Step 4
Using a baking dish, place chilled dough on parchment paper & brush a thin line around the edges using the egg wash.
Step 5
Pipe Strawberry & Cream cheese filling onto pie crust. DO NOT place filling on egg wash line. Leave space to close.
Step 6
Fold top half of pie crust over the filling -EVENLY. Using a fork (start at the tip of crease) firmly press down the edges to seal then brush egg wash onto crust.
Step 7
Once all is completed, place in freezer for 15 minutes. At the mark of 5 minutes Preheat oven at 375 F.
Step 8
Once 15 minutes is done, place the hand pies in the oven to bake for 15 minutes. If the bottom center of the pie is lightly colored set timer for an additional 4 minutes.
Step 9
Let cool for 3-5 minutes and enjoy 😉
