Deruny | Ukrainian Potato Pancakes

Deruny is the Ukrainian name for potato pancakes. They are layered with mushroom sauce and baked before serving. This recipe is for 20 pancakes 3" in diameter + 1 tbsp of sauce.
There is vegetable oil in the list of the ingredients marked as "for frying, optional." These potato pancakes can be cooked with or without the fat. Oil adds more flavor and calories.

Ingredients

peeled and diced
100gonion
peeled and diced
50gall-purpose flour
3eggs
¾ tspsalt
½ tspblack pepper
ground
2 Tbspsunflower oil

Instructions
for pancakes
Step 1
Peel and dice onions and potatoes. Place them in a blender jar and process at low speed. Add the rest of the ingredients for the batter and blend until smooth fr about 45 seconds.
Step 2
Place a non-stick frying pan over medium heat and wait until it is hot. Spoon round pancakes 3-4 tbsp per portion. Let them cook until dry on the surface and flip. Let them cook for an about 30 sec on the other side and transfer from a pan to a plate.

Step 3
Peel and dice onions. Clean and dice mushrooms. Measure the rest of the ingredients for the sauce.
Step 4
Melt butter in a frying pan over medium heat. Saute onions and mushrooms until lightly caramelized, stirring. Add seasoning and adjust it to your taste.
Step 5
Add flour and cook for 10-15 seconds, stirring. Add milk and combine everything in the pan into a sauce. Cook stirring until milk thickens. Adjust seasoning to your taste.

Step 6
Make a pile of 2 or 3 pancakes per portion, alternating them with a tablespoon of mushroom sauce. These portions can be arranged on a baking sheet lined with a silicone mat or small ramekins. Place the portions into a hot (400F) oven for 5 minutes when ready to serve.
