CELERIAC AND KALE HOT SALAD

Instructions

Step 1
1. Preheat oven to 350°F.
Step 2
2. Toss celeriac in ½ Tbsp olive oil and ½ tsp salt
Step 3
Spread on parch-ment-lined baking sheet.
Step 4
Bake for 40 minutes or until golden and fork tender. Transfer to a bowl, set aside.
Step 5
3. Toss pulled kale with the rest of the oil and salt.
Step 6
Spread on the same baking sheet and bake for 10 to 15 minutes, or until edges are lightly brown but kale is still tender and moist.
Step 7
4. Transfer to the bowl with the celeriac.
Step 8
Add shallot, lemon juice, and freshly ground black pepper to taste.
