Maple French Toast with Fennel Turkey Sausage

Ingredients
12 servings

1 TbspCanola oil

28 ozground turkey breast
Raw
3 ozCanned applesauce
unsweetened

1 tspsalt

¼ tspcayenne pepper

½ tspGround sage

¼ tspRed pepper flakes

2 ½ tspCoriander seeds
whole

½ tspgarlic powder

½ tspOnion powder

1 ½ tspFennel seeds
whole

7eggs

3 cupsLow-fat 1% milk

¾ cupSugar

⅛ tspSalt

2 tspvanilla extract

1 tspground cinnamon

27 ozWhole-grain bread slices

¾ cupMaple syrup
Instructions
Step 1
Heat oil in a large stock pot.
Step 2
Add turkey, applesauce, salt, cayenne pepper, sage, red pepper flakes, coriander, garlic powder, and onion powder and fennel seeds. Cook uncovered over medium–high heat for 10 minutes.
Step 3
Remove turkey from heat. Drain turkey in a colander. Set aside for step 7
Step 4
Combine eggs, milk, sugar, salt, vanilla extract, and cinnamon in a large bowl. Stir well.
Step 5
Add bread while breaking slices into small pieces. Stir well.
Step 6
Allow to set for 30 minutes to 1 hour. Bread should be soft and broken up completely.
Step 7
Add turkey. Stir well.
Step 8
Pour turkey mixture into a steam table pan (12″ x 20″ x 2¹⁄2″) lightly coated with pan-release spray. Spread evenly.
Step 9
Pour ³⁄4 cup (about 6 oz) maple syrup over each pan in a swirling motion.
Step 10
Bake: Conventional oven: 400 °F for 25–35 minutes. Convection oven: 375 F for 30 minutes.
Step 11
Allow to rest for 20 minutes before cutting.
