Ingredients

For Salad

1 cupquinoa
cooked and cooled

2sweet potatos
medium, peeled and cubed

1can black beans
drained

1 cupcorn kernels
drained

½ cupred onion
diced

1 Tbsolive oil

salt
to taste

pepper
to taste

3 cupcoleslaw mix

2avocados
peeled and cubed
For the Dressing
Instructions
Step 1
Cook quinoa according to instructions and let cool.
Step 2
Preheat oven to 200 degrees C or 400 F.
Step 3
On a sheet pan spread the sweet potatoes in a single layer, toss with olive oil, salt and pepper and bake for 25 minutes flipping once halfway.
Step 4
Combine all dressing ingredients in a blender and puree.
Step 5
In a large bowl add all of the salad ingredients including the cooked sweet potato and add the dressing. Toss and enjoy within 3 days for best quality.
