FRIED STUFFED OLIVES - an objectively superior appetizer, and the best part about it, you won’t need a recipe for it, it’s that easy to make Ingredients (2 servings) 2 cups of olives of choice, I used Castelvetrano 7-10 anchovies Feta cheese 1 egg or 1/2 cup aquafaba 1 teaspoon cayenne 2 teaspoons oregano 1 cup flour, plus more as needed 1 cup panko, plus more as needed 1 garlic clove Lemon wedges Neutral oil for frying NO SALT! Don’t use any salt in this recipe, you won’t need it, everything is salty enough already. Instructions

Instructions

Step 1
1. If using pitted olives, simply slice them in half. If using whole ones, crush the olive using the back of your knife, that should roughly split it into 2 and you’ll be able to pull out the pit.
Step 2
2. Stuff each olive with feta or anchovies, or a combination of both. Press the olive together to “seal” the stuffing in.
Step 3
3. Prepare the dredging station: add 1 cup of flour to a plate, 1 cup of panko to another plate, and mix 1 egg or the aquafaba, a splash of water, oregano and cayenne in a bowl. Toss each olive in flour, egg mixture, then panko.
Step 4
4. Heat the oil in a skillet on medium heat. Fry the olives, for about 7-10 minutes, flipping them half way through.
Step 5
5. Serve with lemon wedges on the side and freshly grated garlic on top.
