Pork Gyros

A pork gyros with Tzatziki, Houmus, chips, and Greek salad, absolutely delicious!

Instructions

The Pitta

Step 1
Add the yeast and sugar to the water and let sit for 10 minutes.
Step 2
Mix with the rest of the ingredients and thoroughly combine, kneading for 10 minutes.
Step 3
Let sit at room temp for 2 hours, separate into 2 balls, and let those sit for an hour.

The Tzatziki

Step 4
De seed and finely dice the cucumber.
Step 5
Crush the Garlic and chop up the dill.
Step 6
Mix all the ingredients, and adjust the flavour with salt and lemon juice to your taste.
Step 7
Let this sit covered for an hour to allow the flavours to infuse

The Pork

Step 8
Crush the garlic and mix with all the other ingredients.
Step 9
Bash the pork out thin with a meat mallet. This will let it absorb more marinade and become tender.
Step 10
Add marinade to the pork, cover, and let sit for at least an hour

The Salad

Step 11
Chop everything into 1cm cubes and dress with the other ingredients.

The Gyros

Step 12
Heat up the fries/chips in an oven or fryer for the instructed time.
Step 13
Fry or barbecue the pork for a few minutes a side to cook through, then let rest in a chopping board covered with foil.
Step 14
Stretch out the pittas into 25cm circles and cook for 2-3 minutes a side in a hot pan or on the bbq.
Step 15
Lay down some houmus, Tzatziki, fries, pork, and salad, and optionally garnish with sriracha and Tajin
