Instructions

Step 1
Preheat oven to 425 degrees Fahrenheit.

In a large mixing bowl add sliced onion, bell peppers, chicken sausage, olive oil, 1 Tbsp of the Creole seasoning. Mix well.
Step 3
Bake for 10 minutes (or until chicken sausage begins to brown).
Step 4
While the vegetables and sausage are cooking, use a small mixing bowl and mix the shrimp and tomato with 1/2 - 1 tsp of creole seasoning and the paprika.
Step 5
Remove the pan from the oven and add the shrimp and tomato mixture to the pan.
Step 6
Return everything to the oven for about 8 minutes or until the shrimp is done.
Step 7
Add the pan mixture to the cooked rice and toss to mix.
Step 8
Garnish with sliced scallions and serve!
