Step 1
Bring water to a boil and cook the drumsticks with a spring onion for 5 minutes.
Step 2
Remove heat. Cover with lid and simmer for 15 minutes.

Soak in icy water.
Step 4
Tear up the meat with hands.
Step 5
Add oil to another pot. Put in shallots, ginger, spring onion until golden.
Step 6
Mix 1 tbsp of soy sauce, 1 tbsp of oyster sauce, 1/2 tsp salt.
Step 7
Pour the cooked oil into the mixture.
Step 8
Add some chopped spring onion on the chicken.
Step 9
Pour the sauce onto the chicken.
Step 10
Serve.
