Instructions

Step 1
Put pinto beans into a bowl, cover with plenty of water, and soak overnight (or at least 8-12 hours)
Step 2
Drain and rinse beans, put into instant pot.
Step 3
Roughly chop tomato, bell pepper, onion, and garlic. Add to instant pot.
Step 4
Add in all of the seasonings and Apple Cider Vinegar, then add in bone broth until just covered, about 2 cups.
Step 5
Pressure cook on high for 15 minutes, slow release for an additional 15 minutes.
Step 6
When done, OPTIONALLY use an immersion blender to blend do desired consistency (I normally blend for about 30 seconds because I like some chunks!). Taste for salt and pepper, and serve!
