⚡ Tried to cook this a couple of years ago and it's still in my top of potato recipes (right after mashed potatoes I absolutely love since early childhood) ⚡ You can use rosemary or thyme instead of sage (as I did at the photo)

Instructions

Step 1
peel the potatoes, keeping them whole. boil them in salted water for 15 minutes

drain them in a colander and leave to steam dry for 2 minutes. give the colander a few light shakes so the potatoes get fluffy

put the potatoes in a roasting tray, add a pinch of himalayan salt and black pepper. sprinkle over the oil

preheat the oven to 180°C

squash the garlic bulb, then lightly crush each unpeeled clove and add to the tray. roast for 1 hour

put the tray out, sprinkle the sage leaves over the potatoes and roast for more 20 minutes, or until the potatoes are crisp and golden all over
