PASTA WITH FRESH TOMATO AND VEGETABLE SAUCE

The flavor of this dish can become more or less robust by the amount of olive oil used. If you are very seriously cutting fat from your diet, then use just 1 tablespoon of a fruity, flavorful extra-virgin olive oil; if you are only moderately serious about cutting fat, feel free to use an extra tablespoon of oil. A nice touch is to stir a spoonful of olive oil into the dish at the very end of the cooking time. If using fresh herbs, stir them in at the very end also. They tend to turn a drab olive color and lose some of their fresh flavor if they are subjected to prolonged cooking

Instructions

Step 1
Combine the tomatoes, oil, and garlic in a medium skillet; cook, covered, over low heat until the tomatoes are softened and their juices are cooked out, about 5 minutes. Add the vegetables of choice, dried hers, if using, and salt and pepper to taste; stir to blend. Cook, covered, until vegetables are tender, about 10 minutes. Stir in fresh herbs, if using.
Step 2
Meanwhile, cook the pasta in plenty of boiling salted water until al dente, or firm to the bite, about 10 minutes; spoon out 1/2 cup of the pasta cooking liquid and add to the sauce. Drain the pasta. Toss pasta and sauce together. Serve at once with grated cheese, if desired.
