Haloumi and Zaatar Pizzas

Instructions

Step 1
Preheat the oven to 220C. Line 2 large oven trays with baking paper. Thinly slice the tomatoes and onion. Halve the olives (see Make it yours). Thinly slice the haloumi.
Step 2
Heat 1 tbs olive oil in a medium frypan over medium heat. Cook the onion, stirring occasionally, for 5 mins or until soft. Add 2 tsp red wine vinegar and 1 tsp sugar and cook, stirring, for 1-2 mins until caramelised. Renmove the pan from the heat.
Step 3
Put the pitas on the lined trays. Spread with 80ml cup) tomato paste. Top with the tomato, onion, spinach (see Cooking tip), olives and haloumi. Sprinkle with half the zaatar.
Step 4
Bake the pizzas, swapping the trays halfway, for 12 mins or until the haloumi is golden and the pitas are crisp.
Step 5
Scatter some of the remaining zaatar over the pizzas, cut into wedges and enjoy!
