Instructions
Step 1
Mix broth, tamari*, and garlic paste† in a small bowl and set aside.
Step 2
Place noodles in a large bowl and cover with boiling water, giving them a good stir so that they do not stick. Let them soak for at least 10 minutes, stirring every few minutes and checking for doneness. Brands can vary pretty significantly with how long noodles will take to soften. When they've reached the desired level of doneness, drain and rinse thoroughly with cold water to stop the cooking process and rinse the starch. You can toss with a small amount of sesame oil to keep them from sticking.
Step 3
Cook turkey in a deep skillet coated with cooking spray or sesame oil on medium heat 5-6 minutes or until browned. Add the broccoli slaw and cook for 2 minutes.
Step 4
Push turkey/slaw to edges of the skillet. Pour eggs in the middle and cook until eggs begin to set. Then stir into turkey.
Step 5
Add broth, tamari, and garlic to turkey. Cook until heated. Serve with noodles and garnish with green onions.
Step 6
*If you don't have tamari, you can use soy sauce and a Tbsp of rice vinegar.
