Ingredients
4 servings
1.5 poundfingerling potatoes
quartered
cooking spray
1 poundfresh asparagus Spears
fat, trimmed and cut into three inch pieces
6spring onions
trimmed to five inches and halved lengthwise
1 cupwhole milk
¼ cupall-purpose flour
¾ teaspoonkosher salt
½ teaspoonblack pepper
¾ cupgruyere cheese
aged, shredded
2 tablespoonsolive oil
2garlic cloves
minced
1 ouncemultigrain bread
finely chopped or torn
1 tablespoonfresh parsley
chopped
Instructions
Step 1
1. Preheat oven to 375 degrees
Step 2
2. Place potatoes in a Dutch oven, cover with cool water. Bring to a boil over high, reduce heat to medium low and simmer until almost tender, about 10 minutes. Remove potatoes with a slotted spoon and place in an 11 x 7 inch baking dish coated with cooking spray

3. Add asparagus to boiling water and cook for one minute

4. Add onion halves, cook one minute

5. Reserve 1/2 cup cooking liquid. Drain asparagus mixture
Step 6
6. Arrange asparagus and onions in baking dish with potatoes

7. Whisk together milk and flour in a small saucepan. Add reserved cooking liquid. Bring to a simmer over medium high heat and cook until thickened, 4 to 5 minutes. Remove from heat

8. Add salt, pepper and cheese and stir until cheese melts. Spoon evenly over the vegetables in the baking dish

9. Bake at 375 degrees until the top is bubbly and lightly browned, about 30 minutes

10. Meanwhile, heat oil in a small skillet over medium heat. Add garlic, cook until fragrant, about one minute stirring constantly. Add bread and parsley and toss to combine

11. Remove gratin from oven. Preheat broiler to high heat with oven rack in upper middle position. Sprinkle bread crumb mixture over gratin, broil until browned, one to two minutes
