Step 1
Line a large plate with parchment paper. In a food processor, combine the pumpkin seeds, sunflower seeds and oats. Process into a fine meal.
Add the maple syrup and vanilla. Blend until combined.
Add the cacao nibs and pulse together.
Using a 1 tablespoon measure, roll 12 to 16 cookie balls with your hands. Place them on the prepared plate. Freeze the dough balls for 30 minutes to firm. Transfer to a sealed container and keep refrigerated.
