Instructions
Step 1
Preheat oven at 180 degrees
Step 2
Fill a saucepan with water and bring to the boil over a high heat. Add a pinch of salt and the pasta. Cook pasta according to packet instructions. Add carrots 4 minutes before end of cooking. Once the pasta is soft drain, rinse with cold water and set aside.
Step 3
In a medium pan fry garlic and diced onions for 2-3 minutes until onions are lightly browned. Add butter beans, mixed herbs, chopped tomatoes, passata and two pinches of salt, simmer on a medium heat for 5-10 mins. If needed slowly add hot water until mixture has a loose consistency.
Step 4
Add cooked pasta and mix well to combine.
Step 5
Pour the mixture into an oven proof dish and top with cheese.
Step 6
Bake at 180 degree for 15-20 minutes until cheese is melted and golden.
Step 7
Serve.
