Instructions
Step 1
Pre heat the oven to 160°C or 320°F. Line a large baking tray with baking paper.
Step 2
In a large shallow bowl, combine the almond meal, herbs and salt.
Step 3
In a separate shallow bowl, whisk the egg, milk and season with salt and pepper.
Step 4
Dip the chicken into the egg mixture, then coat evenly in the almond mix.
Step 5
Place the chicken on the middle of the lined baking tray.
Step 6
Place the sliced zucchini on the tray.
Step 7
Drizzle with olive oil, a sprinkle of dukkah spice and salt.
Step 8
Add the tray to the oven for 30-35 minutes.
Step 9
To make the lemon tahini sauce, place the ingredients in a bowl and stir to combine.
Step 10
To serve, plate up the chicken, zucchini chips and a serving of brown or basmati rice. Drizzle over the lemon tahini sauce.
