Heat oven to 450⁰

Halve & thinly slice the white & light green parts of the leeks

Thinly slice potatoes
Step 4
Combine the leeks, potatoes, thyme, 3/4 tsp of salt, 1/2 tsp pepper, and 1 1/2 tablespoons of oil in large bowl. Scatter the potato mixture over the dough & sprinkle with the Gruyère.
Step 5
Bake according to pizza crust instructions or until crust is golden brown, about 20 mins.
