Instructions
Step 1
In a pan on medium heat, add the olive oil. Chop the bell pepper and the onion into thin slices and add them to the pan with a pinch of salt. Let it cook for 5 minutes until softened.
Step 2
Chop the tomatoes into small bits and add them to the pan, alongside the spices and the tomato paste. Mix, cover with a lid and let cook for 10 minutes
Step 3
Lastly, crack the eggs into a bowl and add them to small wells into the tomato-pepper mixture. Cover again and cook for 3 minutes. Enjoy with some bread!
