Instructions

Step 1
Preheat the oven to 200 C fan
Step 2
Heat a frying pan over medium-high heat
Step 3
Brush aubergine slices with olive oil and fry until golden
Step 4
Remove aubergine from pan and set aside
Step 5
Heat the remaining oil in the frying pan and add the garlic. Fry for a minute
Step 6
Stir in the tomato puree, tomatoes, vinegar and oregano
Step 7
Simmer gently for a couple of minutes then remove from the heat and seson to taste
Step 8
Spoon half the tomato sauce into a shallow roasting dish, arrange the aubergine on top, then spoon over the remaining sauce
Step 9
Top with mozzarella and grated parmesan
Step 10
Bake for 25 minutes until the cheese is bubbling
