Ingredients

450gchicken thigh
1 eachromaine lettuce
shredded
150gred cabbage
shredded
60gcarrot
300gtinned mandarins
3spring onions
sliced
200gtenderstem broccoli
chopped
1 eachcucumber
sliced, finely
2 Tbspsoy sauce
2 Tbsphoney
1 Tbspred wine vinegar
3 Tbspsesame oil
1 Tbspmandarin juice
from the tin
1 Tbspcoriander
chopped
1 tspnsesame seeds
toasted
spicy salt and pepper marinade mix
Instructions
Step 1
Lightly salt the shredded red cabbage for 1 hour then rinse with cold water and pat dry with a tea towel
Step 2
Cook the tenderstem broccoli and leave to cool down before chopping into bitesize pieces
Step 3
Pre heat oven to 200c or gas mark 6 180c fan oven
Step 4
Glaze the chicken thighs and then leave on a cooking tray for the glaze to develop (30 mins)
Step 5
Cook the chicken for 30mins or until chicken is cooked
Step 6
While the chicken is cooking, make the dressing simply by combining the ingredients in bowl
Step 7
Now arrange the salad with the romaine lettuce, cabbage, carrot, broccoli, spring onions, mandarins and broccoli. Mix in the dressing
Step 8
Then when the chicken is cooked, add it to your salad and enjoy!
