A definite crowd pleaser. Shredding your own cheese is better. For easy transport, make this in a square foil pan, cover with an identical pan and hold the halves together with small binder clips. Then use the lid to serve chips & celery.

Instructions
Step 1
Preheat oven to 350 degrees.

Step 2

Cut and clean chicken. Season on both sides with salt and pepper. Begin cooking in a hot pan with olive oil, about 4 minutes per side, then finish cooking in the oven for 20 minutes. Chop or shred into fine pieces.


Step 3

Shred the Colby Monterey Jack cheese. Melts nicer when you shred it yourself.

Step 4

Spread cream cheese in a 1 quart baking dish. Mix chicken, Buffalo sauce and half the cheese in a bowl, pour it in and spread flat. Add some blue cheese dressing on top if desired and sprinkle with remaining cheese.






Step 5

Bake 10-15 minutes or until hot, then broil on high on top rack for 3-5 minutes.

Step 6
Serve with tortilla chips & celery sticks and or blue cheese dressing on the side.
