Instructions
Step 1
Heat the oil and fry the onions and garlic when soft add the mushrooms and cook for 3 minutes.
Step 2
Make a sauce with the stock, soy sauce, ginger, tomatoes, tomato purée, peanut butter and chilli powder.
Step 3
Microwave the cauliflower, carrots and courgettes.
Step 4
Add the sauce to the pan and add the vegetables, simmer for 10 minutes. Season.
