Instructions
Step 1
Preheat oven to 160 degrees. Line a square tin with baking paper and oil the paper slightly (paper should be overhanging)
Step 2
Combine tahini and honey in a saucepan over medium heat, stirring constantly until just mixed and warm (about 2 mins). Remove from heat and stir in vanilla essence.
Step 3
Combine coconut and seeds in a large bowl. Add the tahini and honey mixture and stir well until mixture is evenly coated.
Step 4
Press the mixture firmly into the pan (about 8mm thick is ideal).
Step 5
Bake until golden (approx 20-30 mins). Remove from oven and let cool completely in the pan.
Step 6
Lift out from pan with overhanging baking paper and cut into squares.
