Step 1
Step 1 Bring a pan of water to the boil and cook the rice according to the packet instructions.
Step 2
Step 2 Meanwhile heat the oil in a heavy-based frying pan over a high heat.
Step 3
Add the steak and sear for a couple of minutes until browned all over, remove from the pan with a slotted spoon and transfer to a plate.
Step 4
Add the onion, fry for 2-3 minutes until soft, then add the mushrooms and cook for a further 5 minutes.
Step 5
Add the stock, bring to a simmer and cook gently for a couple of minutes.
Step 6
Step 3 Return the steak to the pan, bring back to a gentle simmer then remove from the heat and stir in the yoghurt and mustards.
Step 7
Spoon the beef over the rice, top with the parsley and serve.
