Instructions
Step 1
Add all ingredients EXCEPT for chicken, coriander and 1/2 teaspoon salt to slow cooker.
Step 2
Set to low and cook for 2 hours.
Step 3
At about 1 hour and 30 minutes, use a handheld immersion blender to puree mixture until creamy.
Step 4
Brown the chicken in a frying pan and leave aside.
Step 5
Next, add in cubed chicken, additional 1/2 teaspoon of salt and continue cooking covered for remaining 4 hours.
Step 6
Serve over white rice or cauliflower rice topped with chopped coriander and Enjoy!
