Ingredients

500gbeef mince
2long red chilli
2jalapeno chilli
1red capsicum
red cabbage
shredded
2roma tomatoes
medium
spring onion
fresh coriander
1kernel corn
200gblack beans
smoked paprika
chili powder
coriander seeds
oregano
salt
pepper
garlic onion oil
0.5avocado
greek yoghurt
or sour cream
2 cups shredded lettuce
Instructions
Step 1
cook corn and beans. set aside.
Step 2
cook everything else except lettuce, avocado, yoghurt and red cabbage
Step 3
add red cabbage, corn and beans and stir to combine
Step 4
turn off heat and add 1 tbsp yoghurt if too spicy
Step 5
serve on shredded lettuce with scoop of avocado and yoghurt/ sour cream
