bookmark this vegan warm orzo salad asap✨follow for more life-changing salads! you need: 3 cups cooked orzo 1 diced red pepper 3 diced large carrots 1/2 head of chopped cauliflower 1 cubed zucchini 1 diced red onion 1 15 oz can chickpeas rinsed and drained 1/2 cup vegan feta parsley: garnish dressing: 1/2 cup hummus 2 tbsp lemon 2 tbsp water 1 tbsp olive oil garlic salt pepper how to: 1. Roast all the veggies with olive oil salt and pepper on a baking sheet for 30 min at 425 F. 2. Cook orzo. Warm chickpeas up in microwave for a minute with evoo salt and pepper. 3. Add all ingredients into a large serving bowl. 4. Mix dressing together and pour on top. Garnish with parsley! 5. Enjoy besties! GF option: rice, quinoa or gf orzo *the measurements for veggies in the video itself are after the veggies were roasted so they shrunk down!
