Fruit: Apples in Red Wine

This recipe combines apples and wine, two festival foods traditionally associated with Sakhalin and Mabon. The long simmering time burns out most of the alcohol, so it is okay to serve this dessert to children.

Step 1
Peel, core, and segment the apples.
Step 2
(Toss the apple peels over your shoul- der before composting-the letters they may form will indicate the ini- tials of the next guest to your home.)

In a saucepan, bring the wine, cloves, sugar, cinnamon, and vanilla to a boil.
Step 4
Add apples, reduce heat, and let simmer for about an hour, until fruit is almost transparent.
Step 5
Remove the apples and blend the cornstarch into the sauce.
Step 6
Cook the syrup for a few minutes until thickened.
Step 7
Pour it over the apples and serve or chill it in the refrigerator for later use.
Step 8
Top with whipped cream or vanilla ice cream.
Step 9
This dessert will keep for several days in the refrigera- tor, and can be reheated.
