Instructions
Step 1
Heat the oil and add the onion and garlic. Once it starts to fizz add appropriate amount of each spice.
Step 2
After the spices are well integrated and toasted add the aubergine and mix.
Step 3
Add water to deglaze gradually, then put the lid on the simmer, checking every few minutes to add more water.
Step 4
Add tomato paste and mix. Raise the heat so it starts to bubble.
Step 5
Add the hot veg stock and add the lid to bubble for a few minutes.
Step 6
Add in the lentils and stir in.
Step 7
Have the curry reduce down from 20-40 minutes with lid off, checking periodically to add spices.
