Instructions
Step 1
Fry the tofu in a pan on medium heat until golden.
Step 2
Heat oil in a large pot. Add diced onion (leave some for garnish) and cook until soft.
Step 3
Add garlic and ginger and cook for 2 minutes
Step 4
Add chicken stock cubes and 2 L of boiling water. Bring to a simmer. Add star anise and soy sauce. Cover and simmer for 10 minutes.
Step 5
Remove star anise from soup and bin.
Step 6
Add slice mushrooms, dumplings and bok choy. Simmer for 8 minutes. Season to taste.
