20 Minute Shrimp & Sausage Paleo Skillet

A one pan dish that is sure to please. I like Andouille sausage for the spice. I also add one bag of riced cauliflower to increase the servings.

Ingredients
6 servings
1 lbshrimp peeled and deveined
medium, or large
6 ozsmoked sausage
pre-cooked, chopped, choose your favorite
¾ cupred bell pepper
diced
¾ cupgreen bell pepper
diced
0.5yellow onion
medium, diced
¼ cupchicken stock
1zucchini
chopped
2garlic cloves
diced
salt
to taste
pepper
to taste
red pepper flakes
2 tspold bay seasoning
olive oil
or coconut oil
parsley
optional garnish, chopped
1 bagfrozen cauliflower
riced, cooked, optional
Instructions
Step 1
Heat a large skillet over medium-high heat with some olive oil or coconut oil
Step 2
Season shrimp with Old Bay Seasoning
Step 3
Cook shrimp about 3-4 minutes until opaque – remove from skillet and set aside

Step 4
Cook onions and bell peppers in skillet with 2 Tbsp of olive oil or coconut oil for about 2 minutes

Step 5
Add sausage and zucchini to the skillet, cook another 2 minutes

Add in cooked bag of cauliflower rice if using.
Step 7
Put cooked shrimp back into skillet along with the garlic, and cook everything for about 1 minute

Pour chicken stock into pan and mix through to moisten everything
Step 9
Add salt, ground pepper, and red pepper flakes to taste
Step 10
Remove from heat, garnish with parsley and serve hot
