Instructions
Step 1
Preheat oven to 425 degrees.
Step 2
Combine all 6 spices for taco spice mix.
Step 3
Cut chicken into 1/2-inch strips. Place in a resealable plastic bag (or a big bowl) with vegetables and spices. Shake or stir to mix well.
Step 4
Spread in a single layer over two sheet pans lines with aluminum foil and parchment paper.
Step 5
Bake at 425 degrees for 17-20 minutes or until chicken is cooked through.
Step 6
Serve as fajitas or as rice bowls with beans, corn salsa, avocado, guacamole, etc.
