Wash potatoes thoroughly & leave the skins on them. Cut tops off potatoes (not two much) and lay flat-side down on pre-lined baking tray. Sprinkle oil on top (& on tray) to keep moist. Bake at 180 degrees until almost cooked (about 30 mins).
Leave to cool a little (or put gloves on) & carefully scoop out centres of potatoes, leaving about 0.5cm of potato in the bottom of the skins (so that they hold their shape). Put scooped out potato into a bowl & mash with together with the aoili. Add remaining ingredients - mixture should be firm-ish & not sloppy. Scoop potato mixture back into the potato skins & make sure they’re over flowing as the mixture will sink down once cooked. Place on same tray you used to cook them.
Top with grated cheese & cook for around 30mins in 180 degrees or until cheese is golden brown.
