Step 1
In a large frying pan over high heat melt the bacon fat. Add ham and brown. Add mushrooms and onions. Sauté until onions become translucent. Add W sauce and cayenne pepper. Bring to a low boil. In a separate bowl combine cornstarch with several teaspoons of the chicken broth. Stir this into a gravy mixture. Gravy will start the second. Now I have the rest of the chicken broth. Reduce heat and cook several more minutes to thicken. In a large frying pan over high heat melt 3 tablespoons butter. Add shrimp and cook until pink. Salt and pepper to taste. Add shrimp to gravy. Finish with remaining 1 tablespoon butter stirred in. To serve: divide warm grits among bowls and top each with a portion of shrimp and Gravy.
