Instructions

Step 1
In a medium saucepan, add 3 cups water and 1 and 1/4 teaspoons salt. Bring the water to a boil, then add 2 cups of rice. Bring the water back to a boil, then reduce the heat to low, cover the pot and simmer for 15 minutes.
Step 2
Remove the lid and fluff the rice with a fork.While the rice is simmering, heat a large skillet over medium-high heat.
Step 3
Add broccoli to skillet along with 2 tablespoons water; cook for 3-5 minutes or until broccoli is tender.Season broccoli with salt and pepper to taste, then remove from pan and set aside.Wipe out the pan with a paper towel and return it to medium-high heat.
Step 4
Add the 2 teaspoons of vegetable oil; once the oil is heated, add the shrimp in a single layer and season to taste with salt and pepper.Cook shrimp for 2-3 minutes on each side or until pink and opaque.
Step 5
Remove shrimp from pan and set aside.Wipe out the pan with a paper towel and add the orange juice, soy sauce and sugar. Bring to a boil and cook until the mixture has reduced by half and starts to become syrupy.
Step 6
Mix 1 teaspoon cornstarch with 2 teaspoons cold water and add the mixture to the pan. Cook for 1-2 minutes or until the sauce has thickened.
Step 7
Pour sauce over shrimp and broccoli and cover with foil to keep warm.To prepare the fried rice, heat 1 teaspoon vegetable oil in a large skillet over medium heat.
Step 8
Add the garlic and cook for 1 minute - be careful not to let the garlic burn.
Step 9
Add the rice, sesame oil and sesame seeds to the pan and cook, stirring often, for 5 minutes.
Step 10
Add salt and pepper to taste.To serve: place the rice on a platter and top with the shrimp and broccoli mixture.
Step 11
Garnish with sliced green onions and 2 teaspoons of sesame seeds.
Step 12
Serve immediately.
