Chipotle Shrimp Rice Bowls (Moribyan)

Chipotle shrimp is smokey, spicy, and so flavorful! It's so easy to prepare and pairs perfectly with cilantro lime rice. The best part is everyone can build their own bowl with their favorite toppings - you can add some beans, guac, sour cream, or even pico de gallo on top!

Ingredients

Chipotle Shrimp
1 poundraw shrimp
medium, deveined & tail off
2 tablespoonschipotle adobo sauce
to taste
2 tablespoonsolive oil
2 teaspoonsfresh garlic
finely minced
1 tablespoonchili powder
1 teaspooncumin
¾ teaspoonsalt
to taste
1 teaspoonoregano
1 teaspooncoriander
dried
½ teaspoonblack pepper
1 tablespoonolive oil
for drizzling on the skillet/pan
Cilantro Lime Rice
1 ½ cupslong-grain basmati rice
rinsed and drained
1 tablespoonolive oil
1 tablespoonunsalted butter
2 teaspoonsfresh garlic
finely minced
2 ½ cupswater
1 ½ teaspoonsalt
or to taste
1bay leaf
1juice of lime
0.5juice of lemon
small
¼ cupcilantro
finely chopped

Instructions
Cook the Shrimp
Step 1
Pat the shrimp dry with a paper towel.
Step 2
Transfer to a bowl and add the chipotle adobo sauce, olive oil, fresh garlic, chili powder, cumin, salt, oregano, coriander, and black pepper. Mix together to make sure all the shrimp is coated evenly.
Step 3
Heat a pan or cast-iron skillet over high heat. Once hot, add a drizzle of olive oil and toss the shrimp in and make sure not to crowd them so they can get a nice sear.
Step 4
Cook for about 8 minutes, flipping over half way if you'd like a sear on both sides. Once the shrimp is cooked through, immediately take off the pan to prevent overcooking.
Make the Rice
Step 5
Rinse the rice in a fine-mesh sieve with cool water until the water runs clear to remove any excess starch. Another option is to soak it in cool water for 30 minutes. Drain well.
Step 6
Bring 2 1/2 cups of water to a boil in a kettle.
Step 7
To a pot over medium heat, add the olive oil, butter, garlic, and rice. Stir to coat all the rice grains with the butter and oil. Toast the rice for 2 to 3 minutes.
Step 8
Add the hot water, salt, and bay leaf. Stir and then bring to a boil. Once boiling, drop the heat to low, cover, and simmer for 12 to 14 minutes.
Step 9
After 12 to 14 minutes, turn off the heat. Leave it covered for 10 minutes until the rice is perfectly cooked and tender.
Step 10
Take off the lid and fluff the rice with a fork.
Step 11
Transfer the rice to a bowl. Add the lime juice, lemon juice, and chopped cilantro and mix. Serve warm!
