Avocado mash
Poached eggs
Instructions
Step 1
In a smaller bowl mash the avocado (it doesn’t have to super smooth) than add all other avocado mash ingredienst and mix together.
Step 2
Bring a wide narrow pot of water to a gentle boil. Add the amount of salt like you would for pasta. Add vinegar.
Crack eggs in small bowls and gently place into a pot.
Cook on low heat with a lid on for about 4 minutes. Place on a paper towl to dry.
Step 3
Spread the avocado over prepared toasted bread slices. I use toaster, but few minutes per side on a broil in an oven will do too.
Place a poached egg on top of it and sprinkle with cayene peppper.
Step 4

Serve with some fresh tomatoes and enjoy!
