Instructions

Step 1
Pressure Cooker: Add onions, garlic, and oil. Saute or brown until onions are nearly translucent.
Step 2
Add carrots and celery, cooking a few more minutes on saute.
Step 3
Add stock or broth, lentils, and undrained tomatoes. Seal lid and cook 23 minutes on high (soup/stew setting).
Step 4
Quick pressure release. Stir in a splash of balsamic vinegar. Serve with baguettes and salad on the side. Salt and pepper to liking.
