1 ½ cupflour
1 teaspoonbaking soda
1 teaspoonbaking powder
½ teaspoonsalt
3bananas
large, ripe
¾ cupsugar
1egg
lightly beaten
1 tablespoonvanilla
½ cupbutter
Crumb topping
Instructions
Step 1
In a large bowl combine dry ingredients.
Step 2
In a second bowl combine bananas, sugar, egg, vanilla and butter. Mix well.
Step 3
Stir into dry ingredients until just moistened.
Step 4
Fill greased muffin cups until 3/4 full.
Step 5
Combine the first three topping ingredients; cut in butter until crumbly.
Step 6
Sprinkle over muffins.
Step 7
Bake at 375 degrees for 18 to 20 minutes.
Step 8
Cool on wire rack.
