Instructions
Step 1
Soak the dangmyeon noodles in cold water for at least 40 minutes. Wash, soak and cook the rice.
Meat:
Step 2
Marinate the meat with 2 ts soy sauce, 2 ts sugar and 1 ts toasted sesame oil and mix by hand. Cover and let it sit for 5 minutes.
Step 3
Cook the meat for 5 minutes until cooked thoroughly.
Egg Garnish:
Step 4
Whisk the eggs and salt in a bowl.
Step 5
Heat 1 tbsp vegetable oil in a skillet and wipe off the excess oil with a paper towel. Turn the heat to low and add the egg mixture. Tilt the skillet around so the egg spreads into a large circle.
Step 6
Let it cook for a minute until the bottom of the egg is lightly cooked but not brown. Flip the egg and remove from heat. Let the remaining heat cook the other side of the egg.
Step 7
Let it cool and cut into thin strips.
Seasoning Sauce:
Step 8
Combine the soy sauce, brown (or white) sugar, ground black pepper, and garlic oil in a bowl and mix well with a spoon until the sugar is dissolved. Cover and set aside.
Noodles & Veggies:
Step 9
Cut the mushrooms and veggies into slices.
Step 10
Add the mushrooms and carrot to the pot.
Step 11
Add ¼ cup vegetable oil and ¼ cup water to the pot. Mix well everything in the pot with both hands so that all the vegetables and mushrooms are nicely coated with oil. This will not only prevent the ingredients from turning brown from the seasoning sauce, but will also keep them from burning when you cook.
Step 12
Spread the spinach on top.
Step 13
Drain and cut the noodles. Place them on top of the spinach.
Step 14
Drizzle the seasoning sauce on top of the noodles.
Step 15
Cover and cook for 10 minutes over medium heat.
Step 16
Open the lid and stir and gently toss all the ingredients with a wooden spoon and tongs for 1 to 2 minutes, until all the liquid has evaporated and the noodles are nicely cooked and shiny.
Step 17
Add the cooked meat, 1 tbsp sesame oil, and 1 tbsp sesame seeds. Gently toss the mixture so that all the ingredients are evenly distributed.
Step 18
Garnish with the egg strips and serve with rice.
