Ingredients
6 servings
3 cupsBlack Beans
cooked
2stalks celery
cut into chunks
2bay leaves
remove before serving
1red onion
diced
1green bell pepper
diced
1carrot
large, diced
3cloves garlic
crushed
1 teaspoonground cumin
1 teaspoonhot chilli flakes
optional
1 ½ teaspoonssalt
optional
1 x 400gcan of fire-roasted diced tomatoes
or make your own oven-roasted tomato chunks
600mlvegetable stock
1 tablespoonred wine vinegar
add after cooking
3 dasheshot pepper sauce
added after cooking or omit
Instructions
Step 1
Sauté the onions, garlic, bell pepper, and carrots in a little water, add the spices and then sauté for another 5 minutes whilst splashing with water so it doesn't burn.
Step 2
Next add everything else (other than the vinegar and hot pepper sauce) to the crockpot and cook on low for 6 hours or on high for 4 hours.
