Instructions
Step 1
Mix the self raising flour and water to make a smooth, thick batter.
Step 2
Add the vegetables, one tsp oil, salt, and combine well. Add extra water to keep the mix smooth if necessary.
Step 3
Heat the rest of the oil in a large frying pan. Pour the batter into the pan to form an even pancake, at least 1 cm thick and leaving room around the edge to flip.
Step 4
Cook on low-medium heat on one side until brown, about 5-8 mins, then flip.
Step 5
Repeat with remaining batter, and serve with mayo, bbq or okonomiyaki sauce, and those Japanese sprinkly things
