Delicious fried green plantains mashed with minced garlic, pork rinds, and served with a simple garlic mojo for a scrumptious Caribbean dish that will become your new favorite!
Ingredient notes:
- Pork crackling can be made at home by removing the pork skin and fat from a joint of pork, scoring, covering with salt and cooking in the oven at gas mark 7 / 220°C / 425°F for 45 minutes or until bubbly and dark all over the surface
- You can use bacon or lardons instead of the pork crackling
You can use a small bowl to serve a nice mound of Mofongo and drizzle the garlic mojo around. Yummy served alongside a stew and a vegetable dish!

Ingredients

240mloil
for frying, corn, peanut or soy
4green plantains
peeled and cut into 1 inch slices
2 Tbspgarlic
mashed
450gpork cracklings
cut into 1 inch pieces, homemade or bought precooked from a restaurant
1 ½ tspsalt
or more, to taste
6garlic cloves
finely minced
½ teaspoonsalt
2 tablespoonsbitter orange juice
freshly squeezed
2 tablespoonsolive oil
¼ teaspoonground cumin
½ teaspoondried oregano
crushed
1 tablespooncilantro
roughly chopped
salt
to taste
Instructions
Step 1
First, make the garlic mojo
Step 2
Crush together garlic cloves and salt with a pilón (mortar and pestle), and put into a medium bowl
Step 3
Stir in fresh bitter orange juice, olive oil, cumin, oregano, and chopped coriander
Step 4
Add more salt to taste, if desired
Step 5
To Make the Mofongo
Step 6
Heat oil over medium heat and fry the plantains till golden brown all over (3-5 mins). Using a pilón (or pestle and mortar) mash the plantain, garlic, and cracklings together. You might have to do it in small batches and mix it together at the end
Step 7
Shape into 6 balls and place in small bowls
Step 8
Serve with extra pork cracklings (chicharrón) and garlic mojo on the side. Enjoy!
