Instructions

Step 1
Slice the ends off of the plantains. Make three vertical cuts along the length of the plantain, only making sure that you are cutting into the skin. Under cold running water, using your fingers or a butter knife (the tip of your knife works best) to remove the skins. With a sharp knife, cut each plantain into ¾-inch to 1-inch slices.
Step 2
Place plantain slices into a big bowl of water for c. 1/2 hour
Step 3
In the meantime, prepare the Ajillo: use a food processor to blend the cilantro, 2 cloves of garlic, 1 tbsp olive oil, 4 tbsp water and lemon juice until smooth. Season to taste with salt (optional)
Step 4
To make the Mayo Ketchup Sauce: In a small bowl, combine ketchup, tomato paste, mayonnaise and garlic and set aside (this will be good for up to 3 days, covered, in the refrigerator).
Step 5
Remove the plantain slices from the water and dry them well with paper towels or a kitchen towel.
Step 6
Preheat the oven to 425ºF / 220 ºC. Prepare a large baking tray with greaseproof paper
Step 7
Spray both sides of each of the plantain slices with olive oil and place on the baking tray. Bake for 15 minutes and then remove, placing the baking tray on a safe, heat proof surface.
Step 8
Whilst still on the tray, using the flat side of a meat mallet, the bottom of a mug, bottom of a glass, or bottom of a heavy sauce pan or small cast-iron skillet, smash the plantain down until it is evenly flattened (roughly 1/4-inch / 2/3-cm thick. Repeat with the rest of the plantain slices.
Step 9
Spray each side of the smashed plantain again with olive oil and return to the oven for another 15 minutes or until golden and crispy.
Step 10
Serve Tostones with Ajillo and or Mayo Ketchup Sauce.
