For the Jelly:
Step 1
Soak the gelatin sheets in cold water for 20 min or so
Step 2
Meanwhile, dice the cucumber, apple and put everything into a juice maker or blender along with the garlic and basil
Step 3
Strain the juice and pour it into a saucepan, warm it up and add the softened gelatin sheets . Season with salt and black pepper and add the lime juice
Step 4
Pour into the desired mould and refrigerate it until the gelatine solidifies
For the sauce:

Dice the cucumber, apple and put everything into a juice maker or blender along with the garlic and basil
Step 6
Strain the juice and pour it into a saucepan, bring to the boil.
Step 7
Meanwhile, dissolve the cornflour with cold water and add it to the boiling juice, stir it up and cook until it thickness. Season with salt, black pepper and lime juice.
