You can make this the day before and keep in the fridge. The perfect make ahead breakfast casserole! Full recipe feeds 10-12, can be halved. If halved use an 8x8 dish.

Instructions

Step 1
Preheat oven to 350°F

Cook sausage in a pan over medium heat. Cook bacon and chop. Cook the onion in the leftover grease.
Step 3
Lightly spray a 9x13 baking dish with nonstick spray. Add the tater tots to the bottom in a single layer. In a bowl mix together the eggs, milk sausage, bacon, onion, 1 cup of cheese, and. seasonings. Pour over the tater tots. Add remaining cheese over top.
Step 4
If making this ahead of time, cover and refrigerate until the next day.
Step 5
When ready to bake, uncover and bake 45 minutes- 1 hour until eggs are set.
Step 6
Let cool 5 minutes before cutting.
Step 7
Optional- garnish with fresh parsley and chopped green onions
