Instructions

Step 1
Brown breakfast sausage and while breaking into ground meat size (think taco meat) - after cooked drain excess fat (reserve a little in the pan) and put cooked sausage in a large mixing bowl
Step 2
Dice onion and bell pepper and soften in reserved grease from browning sausage and add to sausage in mixing bowl
Step 3
Drain any excess liquid from spinach and add to sausage/onion/pepper in mixing bowl
Step 4
Add shredded cheddar cheese to your level of desired cheesiness and mix all ingredients in the large mixing bowl
Step 5
Put mixture in a greased (use spray oil or butter) 9x13 glass pan
Step 6
Crack 12 eggs in a separate mixing bowl and add egg whites and whisk together (think like you’re making a huge batch of scrambled eggs
Step 7
Pour egg mixture on top of other ingredients and top with another bag of cheese - add cracked black pepper to taste (no salt necessary due to salt content from sausage)
Step 8
Bake at 350 degrees for 48 minutes - remove and allow to cool before refrigerating
