Step 1
Bring 250ml of water to the boil, then add the red lentils and bay leaf. Gently simmer the lentils for 15-20 minutes, stirring occasionally to stop them sticking, until tender.
Drain any excess water and remove the bay leaf.

2 Whilst the lentils are cooking, heat half a tablespoon of olive oil in a frying pan over a medium heat and add the carrot, onion and bacon. Fry them for 8-10 minutes, stirring occasionally, until they're soft.
Step 3
Blitz the oats in a food processor until they've turned into a powder. Mix the oat flour and breadcrumbs with the cooked ingredients along with the soy sauce and chopped coriander.
Shape the mixture into two burgers.
Step 4
If you're frying, heat half a tablespoon of olive oil in a frying pan over a medium heat and cook the burgers for 2 minutes on either side until golden brown. If you're baking, preheat the oven to 200°C and cook the burgers for 20 minutes, turning them over halfway.
Step 5
They will keep in the fridge for up to 3 days or in the freezer for up to 3 months. If you're eating them straight away, top them with some chilli jam, put them in a burger bun (if using) and serve with a mixed leaf salad and cherry tomatoes.
